Pickerel fillets Stuffed with Scallops Ingredients 6 fillet of pickerel 2 cups fish stock or 6 oz can clam juice 1 lb scallops 1/2 cup white wine 1 medium white onion 2 tablespoons cream 4 tablespoons of whipping cream 1/2 stick frozen butter juice 1 lemon Cooking Instructions: in a blender mix the scallops. Add cream, onion, lemon juice & tablespoon butter. Blend until smooth. On each pickerel fillet, portion scallop paste & roll fillet. Place in fish poacher or pan. Add remaining onion, clam juice & white wine. Cover and bake in oven - 20 minutes. Remove pickerel rolls - keep warm. Reduce fish broth by 3/4. Add frozen butter and cream until thick. Add lemon juice & serve over fish rolls.
