Tuna Tombo has a flavor and texture profile in between albacore and ahi tuna. Like albacore, tombo has a soft and buttery flesh, a desirable attribute for dishes such as Crudo or confit. Its flesh varies from whitish pink in smaller fish to deep pink in larger fish.
